Buy acorn-fed Iberian shoulders

Acorn-fed Iberian shoulders are one of the most highly prized products in our cuisine and gastronomy. Acorn-fed Iberian shoulders are slightly smaller pieces than hams, as they come from the front legs of the pigs, which are a little shorter. They therefore also contain less meat, but with a more intense flavour, due to the closeness of the meat to the bone.

At Jamón y Paletilla you can buy your acorn-fed Iberian shoulder in the format you prefer. We stock whole acorn-fed Iberian shoulder pieces, but you can also buy sliced acorn-fed Iberian shoulder and vacuum-packed, or boneless acorn-fed Iberian shoulder.

Sale of acorn-fed shoulders

Our team of professionals has made an excellent selection of the best acorn-fed shoulders on the market. Among all the brands you can buy, we highlight: Benito, Joselito, Romero Sánchez Carvajal, 10 Vetas, Capa Negra or Legado. We also offer the shoulder in several formats: whole piece, boneless or sliced. We also have numerous packs of shoulder with cured meats. A shoulder comes from the front legs of the pig. The shoulder can be 100%, 75% and 50% pork.

Making an acorn-fed shoulder is very similar to ham. First, it is taken to the salting room to achieve ideal drying with the exquisite flavour that characterises it. The next stage consists of controlling microbiological stabilisation. Finally, it is moved to the cellar for optimal curing, taking humidity and temperature into account.
