When it comes to buying a shoulder, many customers are unsure what to buy and what the differences are between jamón y paletilla. On the one hand, ham, regardless of its origin, comes from the hind legs of the pig, while sholulders are obtained from the front legs. Therefore, the characteristics and shapes are very different.
Ham is longer and larger, containing more meat than the shoulder. As a result, the price of the shoulder is slightly lower than that of ham. In terms of yield, the shoulder has a little more waste in bone and fat than ham. But thanks to that fat and bone, the flavour is a little more intense. In figures, we would be talking about 45% of the shoulder compared with 50% for ham. As for carving, the shoulder is a little more difficult to carve because of its shape and the position of the bones, which make the knife’s path more difficult when slicing.
Paletillas, like hams, are a benchmark in our culinary tradition. A food we always feel like enjoying at any time or place. Paletillas are one of the most complete and healthiest foods, as well as the star product of Spanish gastronomy.
