Vacuum-packed ham or shoulder do not lose quality or properties, as this preservation method is designed to keep the flavour, aroma and texture intact for longer, preventing oxidation and contact with external bacteria.

The only thing to bear in mind is that, when the packet is opened, the slices may look slightly dull in colour or more compact due to the lack of oxygen. Simply leave the product for a few minutes at room temperature so that it regains its aroma, shine and natural juiciness, just as if it had been sliced at the moment.

Yes, you can freeze the packets of sliced ham or shoulder if you are not going to consume them soon, as vacuum packing protects the product and allows it to be stored safely. Ideally, place them in the freezer as they are, horizontally, to prevent the slices from breaking or becoming misshapen.

When it is time to eat them, simply move them to the fridge a few hours beforehand and then leave them to rest at room temperature so that they recover their flavour and texture. In this way, the ham or shoulder keeps its qualities almost intact, although the recommendation is always to consume them fresh.
