Label, curing and format:
the keys to your choice.
To choose a good ham, start by understanding what you are buying and how you will use it. Designation, format and weight make a better basis for comparison than a photograph or an eye-catching commercial name.
Read the designation and label
If you choose an Iberian product, check the category and breed percentage. A white seal identifies cebo ibérico; green identifies cebo de campo; red identifies bellota ibérico; and black identifies bellota 100 % ibérico. Our guide to seal colours explains the differences and how to distinguish seals from commercial labels.
Consider the degree of curing
Look for the information supplied by the producer for that product. A higher number of months does not in itself mean you will like it more. Your choice also depends on whether you prefer a firmer or more tender texture and on the character of the individual ham.
Do not judge by appearance alone
The amount of fat or the colour of the hoof cannot replace product identification. A ham with plenty of fat should not automatically be dismissed as inferior. If buying remotely, ask about the format, weight and preparation.
Choose a format you can make good use of
A whole leg requires space, a stable holder and carving practice. Boneless ham takes up less room; sliced ham lets you use one pack at a time. Compare prices for the same format and distinguish whole-leg weight from the net weight delivered.
Separate quality from food safety
Whether a ham suits your tastes is a different question from whether it has been stored correctly. If you suspect spoilage, do not taste it to check. Consult our guide to spoiled ham and keep the product details so you can discuss it with the seller.

Frequently asked questions
What is the best ham for home?
One that suits your tastes, budget and planned consumption. If you have a small household or do not want to carve, compare prepared formats too.
Can I compare by price per kilo?
Yes, but only between equivalent products. A kilo of bone-in ham and a kilo of sliced ham do not represent the same amount ready to eat.
